Chicken Chow Mein

- For the Chicken
- 1 Pound Chicken Breast
- 1.5 Tablespoons Soy Sauce
- 1 Teaspoon Sesame Oil
- 1 Tablespoon Ouster Sauce
- 2 Teaspoons Minced garlic
- To Cook the Chicken
- 1 Tablespoon Flour
- 1 Tablespoon Brown Sugar
- To Finish
- 1 Veggie Mix
- 0.5 Cups Bean Sprouts
- 1 water chestnut
- 2 Tablespoons oyster sauce
- 1 Udon noodles
Instructions 5 steps
- 1 Add the chicken to a bowl with the dark soy, light soy, sesame oil, oyster sauce, five spice (tiny pinch only) and the crushed garlic. Give it all a really good mix so every strip is coated.
- 2 Heat a drizzle of oil in a wok (or a large frying pan) over a high heat. Add the chicken and cook until it’s starting to colour. Halfway through cooking, sprinkle the tablespoon of flour over the chicken and stir it through so it coats everything evenly. Then sprinkle over the brown sugar and keep cooking, stirring, until the chicken is cooked through, caramelised, and golden. Remove from the pan and set aside.
- 3 Add another drizzle of oil to the pan - I like a mix of vegetable oil and a little sesame oil. Throw in the spring onions, carrots, tenderstem broccoli, onion, bean sprouts and crushed garlic. Cook on a high heat for a few minutes until everything is just softened but still has a bit of bite.
- 4 Add the chicken back into the pan with the vegetables. Then add the fresh egg noodles, a drizzle of dark soy, the oyster sauce, a little sesame oil, and a small pinch of brown sugar. Toss everything together until the noodles are hot, glossy, and coated in all that lovely sauce.
- 5 Add chicken, veggies and noodles into pan. Drizzle soy sauce, oyster sauce, a little sesame oil and a pinch of brown sugar
